Crock Pot Sweet Potato Soup


Rainy days either entice me to get creative in the kitchen or make me feel like doing absolutely nothing, but lay in bed all day! We've had quite a few days of constant rain in "sunny SoFla", today being one of them. My easy, mindless crock pot sweet potato soup is perfect dinner flare for a lazy night in! Check it out!

Ingredients:

2 sweet potatoes, peeled and cubed

3 celery stalks, coarse diced

4 garlic cloves

2 c vegetable broth

Salt & Pepper, to taste

1 Tbs. nutmeg

1 can coconut milk

Recipe:

Combine all ingredients except the coconut milk into crock pot

Simmer on high on 3 hours.

Pierce with fork to make sure sweet potatoes are slightly soft; this is an indicator that they are done

Using an immersion blender, blend mixture (still in crock pot) until smooth

Add in coconut milk and stir

Serve with pepitas for crunch!

Yield~ 2 quarts
